Carrot storage tips
Carrots that are not stored properly form terpenoids, which give them a bitter taste. To avoid this, refrigerate carrots or store them in a cool place in perforated bags or containers that allow air circulation. Protected from heat and light, carrots retain their nutrients for up to seven months. During the first five months of storage, their beta carotene content actually increases.
